What Would Matt Make – Part 1

On November 15th, we were invited to join local chef Matt DeMille at Centennial Secondary School in Belleville, Ontario where he was teaching a class of super kids how to make Grill Cheese and Fruit Salad.  Perhaps, at a glance, not the most impressive menu but hold on a minute and read this ingredient list.


Local MacIntosh Apples
Ham
Cheese
Buckwheat Honey
Wowbutter
Bananas
Rice Krispies
Raisin Bread
Butter

Impressive right? Well, at the very least, innovative.  And it’s not all for one sandwich.  Matt created two versions for variety’s sake. Here’s what we learned.

The Ham Wowzer
1.  Lay out two pieces of bread (delicious, bring us back to our childhood, white bread was used here but you can use any kind you like).
2. Layer ingredients on top of one slice starting with the cheese, then ham, apple slices, a drizzle of honey and then another piece of cheese ending with the second piece of bread on top.
3.  Melt butter on a preheated frying pan or skillet and let it get a little bit bubbly. Cook the sandwich, browning each side to perfection melting the gooey goodness inside. (What was really great was that the apple soften perfectly and added the best sweet flavour and texture to the GC.

The Raisin Bread Banana Krisp

1. Lay out two pieces of raisin bread.
2. Spread a good ol’ dollop of Wowbutter (or peanut butter if allergy free) to both slices of raisin bread.
3. Add a sprinkle of Rice Krispies on top then a layer of banana slices and a drizzle of honey followed the second slice of bread on top.
4. Melt butter on a preheated frying pan or skillet and let it get a little bit bubbly. Cook the sandwich, browning each side to perfection melting the gooey goodness inside. (The Rice Krispies added a delightful crunch to the sandwich).

For the fruit salad, grapes were cut in half, bananas and apples sliced and a toss of blueberries added to the mix. Special ingredient? A sprinkle of brown sugar does the trick.
